Moringa Tea-Infused Quinoa Salad with Citrus Vinaigrette
Ingredients:
- 2 Cederberg Organic Moringa Tea bags
- 1 cup quinoa
- 2 cups water
- 1 small cucumber, diced
- 1 avocado, diced
- 1/4 cup pomegranate seeds
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons toasted sunflower seeds or pumpkin seeds
- Fresh mint leaves, chopped, for garnish
Citrus Vinaigrette
Ingredients:
- Juice of 1 orange
- Juice of 1 lemon
- Zest of 1 orange
- 2 tablespoons olive oil
- 1 tablespoon honey or agave syrup
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Instructions:
1. Brew the Moringa Tea: Bring 2 cups of water to a boil. Remove from heat, add the two moringa tea bags, and let them steep for 7-10 minutes to infuse the water with moringa’s earthy, sweet flavors. Remove the tea bags and set the tea aside.
2. Cook the Quinoa: Rinse the quinoa thoroughly under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and the moringa-infused tea. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa has absorbed all the liquid and is tender. Fluff with a fork and let it cool to room temperature.
3. Prepare the Citrus Vinaigrette: In a small bowl, whisk together the orange juice, lemon juice, orange zest, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
