Dandelion Root Tea & Citrus Glazed Salmon
Ingredients:
- 2 Cederberg Organic Herbal Dandelion Root Tea bags
- 4 salmon fillets (about 6 oz each)
- 1 orange, juiced and zested
- 1 lemon, juiced and zested
- 1 tablespoon honey
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Fresh thyme sprigs (for garnish)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped parsley (optional for garnish)
Instructions:
1. Brew the Dandelion Root Tea: In a small saucepan, bring 1 cup of water to a boil. Remove from heat and steep the two dandelion root tea bags for 7-10 minutes to extract its rich, earthy flavors. Remove tea bags and set the brewed tea aside.
2. Prepare the Citrus Glaze: In the same saucepan, combine the brewed dandelion tea with the orange and lemon juice, honey, soy sauce, olive oil, garlic, and a pinch of salt and pepper. Bring the mixture to a gentle simmer and reduce for about 5-7 minutes until it thickens slightly into a glaze.
3. Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the citrus glaze over them, turning to coat each fillet evenly. Let the salmon marinate for at least 15 minutes, allowing the flavors to meld.
4. Sear the Salmon: Heat a large skillet over medium heat. Once hot, add a drizzle of olive oil and sear the salmon fillets, skin-side down, for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through and opaque in the center.
