Hibiscus Tea-Infused Poached Salmon with Citrus & Herb Dressing
Ingredients:
- 2 Cederberg Organic Hibiscus Tea bags
- 4 salmon fillets (6 oz each)
- 4 cups water
- 1 tablespoon honey
- 1 lemon, sliced
- 1 orange, sliced
- 2 cloves garlic, minced
- 1 teaspoon black peppercorns
- 1 small bunch of fresh dill, for garnish
- Salt and freshly ground black pepper, to taste
Citrus & Herb Dressing
Ingredients:
- 1 tablespoon olive oil
- Juice of 1 lemon
- Juice of 1 orange
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Instructions:
1. Brew the Hibiscus Tea: In a large pot, bring 4 cups of water to a gentle boil. Remove from heat and add the 2 hibiscus tea bags. Steep for 10 minutes, then remove the tea bags and stir in the honey. The tea will create a vibrant, flavorful poaching liquid.
2. Poach the Salmon: Return the pot to low heat, add the lemon slices, orange slices, minced garlic, black peppercorns, and a pinch of salt. Place the salmon fillets gently into the hibiscus poaching liquid. Poach the salmon for 8-10 minutes, or until just cooked through and tender.
3. Prepare the Citrus & Herb Dressing: While the salmon is poaching, whisk together the olive oil, lemon juice, orange juice, parsley, dill, Dijon mustard, and a pinch of salt and pepper in a small bowl.
4. Serve: Remove the salmon fillets from the poaching liquid and place them on serving plates. Drizzle each fillet with the citrus and herb dressing and garnish with fresh dill sprigs. Serve with roasted vegetables or a light green salad.
